Comic Relief Dinner for Sainsburys

‚ÄčIn March I was asked by Sainsburys if I would be interested in supporting their Comic Relief dinner in the hope of raising money for this invaluable charity. Of course I jumped at the chance as I really like supporting charities wherever I can but then the nerves hit me when I heard that previous dinners were cooked by Anton Edelmann, Michel Roux Jnr, Albert Roux, Atul Kocher and last year Yotam Ottolenghi! The pressure was on and I felt the fear but it made me work harder! I ended up cooking a 5 course Mauritian Street Food Menu inspired by the lovely tropical island of Mauritius and wanted everyone to experience a unique menu. We prepared a range of wonderful dishes ranging from a amuse bouche of ginger, pumpkin and curry leaf veloute, red snappr with a fragrant mauritian coconut curry, with the finale being a lychee and mango pannacotta with tropical fruits and praline. The night was a big success and we managed to raise ¬£120,000 for Comic Relief so it was a truly memorable night. The lovely Gaby Logan was the presenter for the night and really made the night very special.
