Cauliflower ‘Egg Fried Rice’

Ingredients

1/2 head of a large cauliflower
1 tsp sunflower oil
2 cloves of garlic, finely chopped
1 courgette, finely diced
100g green beans, finely sliced
1 tbsp Chinese five spice
1 egg
Sal and freshly ground black pepper, to season
Fresh coriander, chopped (optional garnish)

Method

‚ÄčTrim the cauliflower (removing leaves and core) and break into large florets.  Blitz the florets in a food processor until it resembles rice (large crumbs).

Heat a wok over a medium heat.  Add the oil.

Add the garlic and gently fry for a minute.  Add the courgette, green beans and cauliflower to the wok.  Stir-fry for 3-4 minutes.

Add the five spice, salt and pepper and crack in the egg.  Stir fry for another 2 minutes.

Serve immediately, garnished with chopped coriander, if using.
