Chickpea and Coriander Burger

These burgers can be made in less than 15 minutes and are packed full of flavour.

Ingredients

410g tin chickpeas in water
1 red chilli
2 tsp mild curry powder
28g packet fresh parsley
28g packet of fresh coriander
2 medium eggs - organic and free range
150g breadcrumbs
2tbsp olive oil
4 whilemeal pitta sliced in half

Method

Place the chickpeas, chilli, the curry powder, parsley, half of the coriander, the eggs and breadcrumbs in a food processor. Pulse to a paste. Using wet hands, form 8 small patties.

Heat the oil in a large frying pan over a medium heat and cook the patties for 2-3 minutes on both sides.

Meanwhile toast the pittas and serve with a fresh mango salsa.
