Condiments

Simple condiments to transform any main dish

Ingredients

Spiced Okra
100g okra finely sliced
2tbsp garam masala
Salt to season
Vegetable oil for frying
Mint & Pomegranate Raita
1/2 pomegranate seeds
100g Greek style yoghurt
3-4 tbsp chopped mint
1/2tsp salt or to taste
Jalapeño Houmous
1 tin of chick peas
1 clove of garlic
6tbsp extra virgin olive oil
3tbsp tahini
8 slices of jalepeño
Juice of 1 lemon
Salt to taste
Garnish
Sweet paprika
Olive oil
Jalepeños

Method

​Spiced Okra

If you have a deep fat fryer set the temperature to 180 or you can shallow fry these using a saucepan 

Mix the okra with the salt and garam masala

Deep fry until golden brown (around 3-4 minutes)

Drain well on paper towels and allow to cool. 

Mint and Pomegranate Raita

Mix all the ingredients together and season with salt. 

Jalepeño Houmous

Place all the ingredients into a food processor and blitz until you get a smooth paste. To serve, sprinkle with some paprika, drizle of oil and a few chopped jalepeños.
