Pistachio Honey and Orange Blossom Baklava

This gorgeous baklava contains pistachio, orange blossom and honey….some of my favourite things to put in a sweet. ‚Äč


For the pastry

28 sheets ready-made filo pastry
250g unsalted butter as well as some extra for greasing the tray melted in the microwave
200g pistachios blitzed in the food processor
1 tsp ground cardamom which I mix into the pistachios and leave in a bowl

For the syrup

350g unrefined golden caster sugar
250ml water
50ml runny honey
Juice of half a lemon
1 tbsp orange blossom water
Pinch of salt



Preheat the oven to 180C

Grease a baking tray with butter

Lay 10 sheets of pastry into the baking tray each layer must be brushed with melted butter before you add the next layer

Then take the pistachio and cardamom mixture and lay across the entire tray then layer on the remaining 18 sheets of filo once again making sure each layer is covered with butter. You may require a bit more butter if you run out.

Cut the pastry into diamond shapes using a sharp knife making sure to cut through the entire pastry.

Place baklava in the preheated oven for approximately 30 - 40 minutes at 170 then decrease until the pastry is lovely and golden on top. If you see it getting dark too quick reduce the oven temperature as you need to be careful to not let the pastry burn.

For the syrup, heat the sugar and water together until you get a syrup this should take about 10 minutes over a medium to high heat. Right at the end turn off the heat then add the honey, orange blossom, lemon juice and salt. Pour this over the baklava while hot as soon as it comes out of the oven. Allow the baklava to cool down overnight in the kitchen before eating.

My tip is make sure you don't add the honey, lemon juice and orange blossom and salt at the beginning of making the syrup because it will cook out and you will lose that lovely fragrance.
