Spicy Aubergine Fritters

I love aubergines, particularly the finger aubergines which tend to be sweeter in flavour - you can find these in specialist Asian supermarkets 

Ingredients

200g gram flour
1 tsp salt
1 aubergine cut into circles 3mm thick
2 red birds eye chilli
1 tbs chopped coriander
1 cup of warm water
Vegetable oil for frying
1 clove of garlic

Method

If you don’t have a fryer at home, don’t worry, you can make these in a shallow frying pan and they will be just as tasty. Make sure you have enough oil in the pan to immerse the fritters. If you are using a fryer, set it to 180c, if a shallow pan, heat at medium/high for about 3 mins before adding the aubergine fritters.

In a mixing bowl add the gram flour, chopped coriander, 1 grated garlic clove and salt and mix together until all combined. Using your hands, mix in some water, a little at a time, what you want to achieve is a dropping consistency, probably similar to a pancake mix. Once you get to that point, add your sliced aubergine to the mixture and coat each aubergine evenly.

Drop the fritters into the oil and cook until you get an even brown all over and they are crispy. The perfect fritter should be crispy on the outside and soft in the inside.

You can serve this with a hot pepper sauce, or even better, with a Mauritian Coriander Chutney.
