Banana, Walnut & Ginger Cake

At the end of the week I always end up with a umber of nearly off bananas! I decided to add some spice and turn it into something really delicious.


100g room temperature butter
175g Billingtons unrefined golden caster sugar
2 medium free range organic eggs
Zest of 1 lemon
350g very over ripe mashed banana
300g plain flour
2.5tbsp baking powder
1/4 tsp salt
2tbsp ground ginger
120g crushed walnuts


  1. Pre heat the oven to 180 degrees.
  2. Mix together the butter and sugar until light and fluffy. 
  3. Add the eggs until pale and creamy.
  4. Add in the banana, lemon zest and mix briefly, the mixture will curdle but this is normal.
  5. Lighly fold in the flour, salt, ginger powder and baking powder until completely amalgamated.
  6. Fold in the nuts and place into a pre lined 9inch cake tin and cook for 1 hour.
