Prawn and Mango Ceviche

The perfect al fresco starter, easy but impressive particularly for dinner parties

Ingredients

2 large mangoes, peeled and cut into 1 inch pieces
200g uncooked king prawns
1 large red chilli finely chopped
3-4 tbsp chopped coriander
1 small red onion finely chopped
Juice of 3 limes and zest of 1
1/2 tsp salt or to taste
Garnish
Red chilli
Coriander

Method

Mix all the ingredients together in a mixing bowl and leave in the fridge to marinate for 20 minutes

Divide the mixture into 4 glasses and scatter with more chilli and coriander
