Feta and Sweetcorn Fritters

I made up this dish from some leftover feta and sweetcorn I had in the fridge - my girls were coming over in the evening and it was a quick starter which they loved.


100g feta
100g tinned sweetcorn
2tbsp chopped coriander
1 clove of garlic grated
200g chick pea flour
150ml of warm water
1 egg
1tsp hot paprika
2tsp ground cumin
Vegetable oil to cook the fritters
100ml greek yoghurt
2tbsp mint sauce
1tbsp ground cumin
Salt to taste
1/2 lemon juice


​Add all the mixture for the fritters (reserving the feta) into a big bowl and mix until you reach dropping consistency. Crumble in the feta.

Over a medium heat, add some vegetable oil to a pan and drop in spoonfuls of the mixture.

Allow to cook for 3 minutes on each side until golden brown and drain on some kitchen paper.

In another small bowl, add all the ingredients for the dressing together and mix well.

To serve, place the fritters over the plate, garnish with some coriander leaves and drizzle over the yoghurt dressing.

Serve immediately
