Spiced Slaw

This is perfect to serve on hot balmy nights alongside a simple roast chicken or pan seared pork chops


4 tbsp good quality mayonnaise
4 tbsp whole milk
2 tsp curry powder
1 tsp ground cumin
1/2 red cabbage finely sliced
195g can of sweetcorn, drained
3 spring onions finely chopped
1 pink lady apple, cored and finely sliced
Salt and pepper to season


In a large bowl whisk together the milk, mayonnaise, curry powder cumin and salt and pepper. Add the vegetables and toss until completely coated.
