Cinnamon Doughnuts

These take a bit of time but making your own doughnuts at home is do satisfying, serve warm with some ice cream on the side

200g plain flour
1tbs yeast
Pinch of salt
50g butter
40g sugar
130ml of milk
1 large free range egg
Vegetable oil for frying
3tbs cinnamon powder
10tbs caster sugar

Add yeast to warmed milk and 1 tbs of sugar, leave to one side as you prepare the other ingredients.

Sift the flour, rest of the sugar and salt into a large bowl and mix together, add the butter and mix with your hands to get a breadcrumb consistency.

Slowly add the yeast mixture, along with an egg and combine well and knead for approximately 5 minutes. Leave the dough to rise in a bowl covered with a damp cloth. After around 40mins, you will see that the mixture has doubled in size, you need to knock the mixture back and roll into the shapes you need for the doughnuts, normally around the size of a plum. Leave to rest for another 30minutes covered with a damp cloth. You will see that the doughnuts have risen again. If you have a deep fat fryer, set the temperature to 180 degrees, carefully lift the doughnuts and place into the fryer, leave to brown on one side, then using a spoon, turn the doughnut over to brown on the other side. This should take around 3-4 minutes. As soon as the doughnuts are cooked, dust with the cinnamon sugar and serve. Best eaten warm.

If you don’t have a deep fat fryer, use a deep pan/wok or something that will give the doughnuts space to move around.
