Sticky Apple & Ginger Pudding

‚ÄčThis sticky apple and ginger pudding is the perfect alternative to the classic sticky toffee pudding with sharp apple tones with molasses running through it with a perfect combination of warm spicy ginger. It must be served with cream or custard no short cuts here ! 


150g sifted self raising flour
150g unsalted butter
150g unrefined light brown sugar
3 medium organic free range eggs
60g finely chopped stem ginger
6tsp golden syrup
3 medium sized apples cored, peeled and finely diced


Pre heat oven to 180 degrees


In a food processor add the butter and flour and pulse until it res embles breadcrumbs, add the sugar and eggs and pulse until a batter comes together. Add the stem ginger and apples and pulse to combine.


Pre butter 6 pudding basins and place a tsp of golden syrup at the base of each basin


Lay over the pudding mixture and place into the oven for 15-18 minutes
