Chicken with Lemongrass, Chilli & Ginger

​The perfect pick me up chicken dish packed full of flavour and fragrant herbs. The lemongrass and chilli are perfectly balanced making this dish so moreish and one you’ll just keep cooking again and again 

Ingredients

2tbsp vegetable oil 2 small red shallots finely chopped 3 cloves of garlic 2 inches of ginger julienne 2 stems of lemongrass 1 large red chilli 500g skinned and boneless chicken thighs thinly sliced 2tsp of dark muscavado sugar 1tbsp fish sauce 50 ml water 2tbsp freshly chopped coriander 2 tbsp freshly chopped mint

Method

​Using a wok over a high heat, add the oil and immediately add the shallots, garlic, ginger and lemongrass, cook for 2-3 minutes being careful not to burn the garlic, it should become fragrant 

Add the chicken and chilli and cook for a further 4-5 minutes, constantly moving the chicken around to enable it to cook evenly and not burn at the bottom 

Add the sugar, fish sauce and the water and cook for a further 2 minutes 

Once cooked, toss in the chopped herbs and serve with thai sticky rice
