Steamed Hake with Soy & Ginger

Serves 1

1 fillet of hake
Juice of half a lemon
1 tbsp soy sauce
1 ince piece of ginger, finely shredded
Freshly ground black pepper, to season
Garnish (optional)
1/2 large red chilli finely sliced
Small bunch spring onion finely sliced
To serve
Wholewheat couscous (cooked according to pack instructions)
Steamed green beans and mangetout

Preheat the oven to Gas Mark 6/ 200c/ fan 180c

Cut out a large square of foil.  Place the hake in the middle of the foil.  Drizzle the lemon juice and soy sauce over the fish and top with the ginger.  Season with black pepper.  Bring the edges of the foil together to encase the fish, and crimp the edges, making sure you've left enough room inside for the fish to steam.

Place in the pre-heated oven and cook for 15 minutes.

Carefully open the foil parcel.  Place the fish on a plate and garnish with chilli and spring onion.

Serve with the couscous and steamed vegetables.
