Ras El Hanout Kebabs

​Ras El Hanout is a delicious moroccan spice mix similar to the Indian garam masala and means “top of the shop” gorgeously fragrant and easily adds bags of flavour to any dish. 

Ingredients

2 skinless chicken breast fillets
2 cloves finely chopped garlic
2tbsp ras el hanout powder
2tbsp olive oil
100g mixed vegetables such as peppers & courgettes
handful of chopped parsley
juice and zest of 1 lemon
Salt & pepper to taste

Method

Pre heat oven to 180c

​Diced the chicken into 2 inch pieces along with all the vegetables

Place all the ingredients into a large mixing bowl and mix well 

Skewer the chicken and vegetables onto metal skewers and lay on a pre oiled baking tray and cook for 20 mins turning after 10 minutes to ensure the kebabs are thoroughly cooked. 

Enjoy with a side salad and a yoghurt & coriander dressing
